A typical dish of Sassari and Porto Torres and northern Sardinia, Zimino is a roast of veal offal cooked on the grill: an ideal delicacy for meat lovers and summer barbecues. The veal entrails, preferably washed in water and vinegar, are roasted on the grill, cut into pieces, salted and sprinkled with a thin layer of powdered pepper. The zimìno should be eaten warm.
